Thus, the microbiological and mycotoxicological safety of cereals is considered very important both for food and for animal feed. The paper presents the results of research on the level of mycotoxin contamination of cereals and cereal products in Iasi County in the 2015-2019 study interval. The aim was to study the incidence of mycotoxins that have a negative influence on the safety of agri-food products, with subsequent negative impact on human and animal health.
