    The importance of traceability in the beer brewing process within the brewing microproduction workshop

    Transparency in identifying the origin of food is a necessity. After a number of recalls and incidents related to food insecurity around the world, consumer awareness of food security issues has increased. In this scenario, food traceability appears as an important tool. The importance of the present paper derives from the approach to a highly current research area, namely the guarantee of food safety, food quality and the continuous concern of alcoholic beverage producers to obtain safe and healthy products. The main objectives and activities consist of: (1) making an exhaustive documentation of the national and international legislation (especially that of the EU) related to the topic addressed; (2) establishing the manufacturing recipe, the raw and auxiliary materials and the optimal technological parameters for beer manufacturing, the development of manufacturing technological norms for the companies in the field (internal quality standards); (3) planning and tracking the production process; (4) physico-chemical characterization of the raw and auxiliary materials that enter the manufacturing process of the analyzed products. This analysis can be useful for the creation and development of new guidelines to improve the production process of beer, aiming at a higher degree of satisfaction of breweries and increasing the degree of safety of foods in the brewery chain.

    Studies on the physical changes of vegetables subjected to drying

    Vegetables are of significant importance in human nutrition, containing beneficial micro and macro elements for the daily diet. Vegetables are important sources of vitamins, proteins, carbohydrates and mineral salts. However, due to their seasonal growth and short shelf life, they can be consumed at certain times of the year, depending on their nature. For this reason, the vegetable sector requires additional knowledge to manage the quantities obtained seasonally, throughout the year. Although these efforts are made, large quantities of vegetables are wasted annually, which lead, on the one hand, to large losses for processors and, on the other hand, to the waste of food beneficial to the human body. In order to reduce the amounts lost annually, storage and preservation methods are studied and developed, in order to extend the shelf life, aiming to preserve the benefits of the vegetables. One of these conservation methods is drying, this has been practiced since ancient times, using the sun as a heat source. Over time, modern drying techniques have been developed in such a way as to obtain a product of high quality, to be microbiologically stable, to have the appearance and properties as close as possible to the fresh product and to have production costs as low as possible. Drying is the operation that not only extends the shelf life considerably, but also reduces transport prices for dried vegetables, as they reduce their volume by 52-80%. Although the dehydration of vegetables has a number of benefits, for its realization it is important to take into account a lot of factors, because not observing them favors the loss of micro and macro elements in the product and can lead to the destruction of their appearance.

    Contributions to the optimization of the eco-conditionality system in direct payments for romanian farmers in the period 2021-2027

    The paper proposes to conduct a study on the optimal use of the CAP's "eco-conditionality" instrument in the context of the revision of the normative framework and procedures regarding the schemes and support measures for farmers in the period 2015-2020 and the conditions applicable to them. Were also considered the significance of applying this instrument as well as the issues that may arise from their non-application/improper application. In terms of eligibility requirements, declared surface, payment rights, and surface control sanctions, the results of the verification of surface payment requests for the years 2015 to 2021 reveal that a total of 7,800,417 payment requests (applicants) were made for a declared area of 9,684,116 ha (annual average), with a total payment request value of approximately €6,018,442.1 thousand. After the farmers' declared territories were verified, SAPS sanctions (unpaid amount) in the amount of €372,122.8 thousand were put into effect. The primary role of agriculture, which accords this industry a particular standing in EU regulations, is that of a supplier of agri-food goods for the general public's use. All strategies for developing, supporting, and funding the CAP are built on this role. We put forth the following suggestions in relation to the optimization of the cross-compliance mechanism within direct payments for farmers. To lessen the obligations for small agricultural holdings where the risk is lower, the eco-conditionality requirements must be designed in a way that takes into consideration the size of the agricultural holding. Farmers and their control bodies must be able to understand the mandatory requirements for farmers and their control elements. It is advisable to eliminate GAEC standards and SMR requirements that are difficult to audit and cannot be quantified. In any scenario, the quantity and nature of cross-compliance requirements must be altered. Mandatory standards for farmers and the aspects of their control must be pertinent and simple for farmers and control organizations to comprehend. Inspection quotas should be lowered if particular control bodies have risk analysis systems that adhere to Community legal requirements and information on the extent of compliance.     Quality analysis of some assortments of milk chocolate and white chocolate sold in Romania

    The study consisted in the comparative assessment of the quality of some varieties of milk chocolate and white chocolate sold in Romania, following their sensory, chemical (including energy value), economic and aesthetic characteristics. Were analyzed 48 samples from eight varieties of chocolate (milk chocolate was coded M1, M2, M3, M4 and white chocolate was coded W1, W2, W3, W4, six samples for each producer, from different batches). The sensory characteristics were analyzed by tasting (using the scoring scales method of 0-5 points). The content of water, dry matter and lipids was determined by classical standardized methods; the results obtained were compared with the values declared on the label by producers. Following the sensory analysis, five products were included in the category of good products (near under the 18 points) and three in the class of very good quality (over 18.1 points). According to the information on the labels the products studied had as main ingredient the sugar, for white chocolate an average of 58.73%, then an average of 33.48% lipids, 5.58% proteins and 0.30 % salt; for milk chocolate was found an average of 59% carbohydrates from which 58.25% sugars, 31% lipids, 4.55% proteins and 0.25% salt. The lipids determined by Soxhlet method for white chocolate was closed in average to the information on the labels (33.26% vs 33.48%), but for milk chocolate was determined 29.09%, compared with 31% from the label, with 1.91 percentage points difference.

    Cutting, deboning and selection of game meat for traditional specialties

    The low consumption of game meat is directly related to the insufficient exploration of data on game meat processing and handling. Taking into account these considerations as well as the fact that in the practice of the meat processing industry methods and assessing game meat for processing have not yet been developed, the main aim of the paper is to highlight how this is done from a practical and applied point of view in the main game meat processing operations in terms of cutting, deboning, and selection of game meat for processing, associated with the determination of the carcass yields of the main sliced anatomical regions of the higher quality classes used to obtain traditional specialty products. To this end, following the primary processing of the game carcasses, the weighting of each anatomical portion will be assessed, both at the level of the region and of the carcass as a whole. The reasoning behind the processing of game meat into traditional specialties encompasses the complex features of the anatomical regions intended for the production of these products as well as the species of origin. For these reasons, the present study will concentrate on the cutting and deboning capacity of wild boar meat in accordance with the methods of processing the anatomical regions of the higher quality classes of their carcasses.

    The perception and attitude of mountain producers towards the optional quality label "Montan Product"

    In the general acceptance of the mountain area, it is defined as an area with severe natural constraints, which includes over 30% of Romania's territory. Mountain agriculture is mainly carried out in small farms with low production, a fact due precisely to socio-economic conditions and geographical limitations. For this reason, the obtained products must value their sensory and nutritional particularities, simultaneously with gaining the consumer's trust regarding their quality and authenticity. The adoption of the optional "Mountain Product" quality designations is a starting point for relaunching and supporting the mountain economy. The aim of this paper is to understand the perception that mountain producers have on the products they obtain as well as an understanding if the mention of optional quality is a viable opportunity in the attempt to revitalize the mountain economy.

    Comparative study between abc method and the traditional method of calculating the production cost

    This article aims to highlight how to calculate production cost using the Activity- Based Costing method (ABC), but also the traditional calculation method, to determine their advantages and disadvantages. These two calculation methods aim to determine the final production cost, but the approaches differ from one methods to another. The study is based on scientific research procedures, such as observation methods, economic analysis, case study and descriptive methods. The cost prices for the wine will be calculated, following all the steps from the two cost calculation methods. The differences and similarities between these two cost calculation methods will be presented through a case study at Research- Development Station for viticulture and winemaking Iasi. The use of the Activity- Based Costing method ensures a more correct allocation of indirect costs, allowing a better analysis of the elements that generated the costs, on the other hand, the traditional method of calculation costs requires amore simplistic approach, as it is not possible to analyze all cost-generating elements.

    Innovation audit as an innovative management technique in the agricultural field in seed companies

    The agri-food sector has become a competitive one on the market in our country, characterized by dynamism, innovation and sustainability; in this case, seed companies are the most vocal and innovative in this field. In this present study, we aimed to analyze the innovation capacity of the seed producing companies in our country, by examining the key indicators, processes and organizational practices of the organizations. The preliminary results highlight the barriers that appear within organizations in the recruitment process, as well as the identification of the necessary methods to maximize their recruitment capacity. The basic instrument of the innovative audit is the questionnaire, and the element of novelty is given by the four elements: the organization and culture of innovation, the strategy and ability to invoke innovative processes and innovative products. The results are presented in the spider diagram based on the score between the categories; they bring out the creativity of people in an organization, the identification and control of barriers that prevent creativity and innovation within the organization, as well as marketing practices to promote innovation.

    The global assessment of the state of food security and progress towards achieving the hunger and food insecurity targets

    This scientific approach presents an updated global assessment of food insecurity and nutrition for up to the year 2021 and a scientific approach on progress towards meeting SDG Targets 1 and 2 ending hunger and ensuring access to safe, nutritious and sufficient food for all people all year round and eradicating all forms of malnutrition. Despite hopes that the world would emerge more quickly from the crisis and food security would begin to recover from the pandemic in 2021, the pandemic held its grip and even tightened it in some parts of the world. The rebound of gross domestic product (GDP) growth observed in most countries in 2021 did not translate into gains in food security in the same year. Enormous challenges are still faced by those who continue to be the most affected: those with less wealth, lower and more unstable incomes and poorer access to critical basic services. Another crisis is unfolding as this scientific approach is being written with potentially sobering implications for global food security and nutrition: the war in Ukraine. Although the statistics presented in this scientific approach represent the state of food security and nutrition up until 2021, the direct and indirect effects of the conflict in 2022 will have multiple implications for global agricultural markets through the channels of trade, production and prices. Ultimately, this casts a shadow over the state of food security and nutrition for many countries, in particular those that are already facing hunger and food crisis situations, and poses an additional challenge for achieving the SDG 2 targets of ending hunger and ensuring access to adequate food for all (SDG Target 1) and of eliminating all forms of malnutrition (SDG Target 2).

    Aspects concerning the entrepreneurship measurment

    The measurement of the entrepreneurship considers that entrepreneurship is a multifaceted phenomenon that requires a complex measure. In determining the index, instead of a quantitative approach, an adequate measure is the consideration of the quality aspects of entrepreneurship. After that, both individual efforts/capabilities and environmental/institutional aspects of entrepreneurship are to be taken into account. The different aspects / components of entrepreneurship constitute a system in which the interaction of the elements is vital. Entrepreneurship policy needs to be designed from a systems perspective, offering a tailored policy mix that fits a particular country's entrepreneurial profile, rather than offering one-size that fits all suggestions. The global entrepreneurship index defines entrepreneurship at the country level as a National Entrepreneurship System that is the result of the dynamic, institutional interaction of entrepreneurial attitudes, skills and aspirations of individuals, which leads to the allocation of resources through the creation and operation of new business projects.

    Diversification as an alternative strategy for sustainable farm development

    Structural changes in agriculture have drawn attention to new opportunities to use the farm's resources. In order to support rural development, the agricultural policy makers have consistently promoted multifunctionality and diversification of farms by encouraging new types of activities. Farmers get involved in diversification operations and developed on-farm and off-farm activities for various reasons: to face the challenges of the agricultural context, to obtain additional income, continuity of their agricultural activity, to improve their family's quality of life and to reduce the risk of the unstable agricultural market environment. The decision regarding farm diversification depends on a series of factors related to economic, geophysical and socio-demographic farm characteristics or to environmental conservation strategies. The proximity to urban areas fosters the process of farm diversification and it also influences the level of diversification. The sustainability of the farm involves not only economic, but also social and environmental aspects, but most of the farmers are more interested in the economic and social performance and less in the ecological performance. The main forms of farm diversification include: agritourism; non-traditional crops, livestock and practices; added value to existing agricultural products; new marketing and distribution channels; consulting or education service; conservation and restoration of historical buildings, equipment, artifacts from the farm.

    Study on the influence of climate, soil tillage, and some agricultural species on the process of water storage in the soil in the north-east Baragan area

    Soil and water are some of the prime components of nature. The development of life depends directly and indirectly on the health and quality of the land. Regardless of its composition, the soil contains substances that allow the growth and development of many plant species and microorganisms. The increase in temperatures, the decrease in rainfall, and the applied agricultural technologies have contributed over the years to ruining the structure and components of the soil, which negatively affected its humidity. The paper aims to identify the type of tillage in the dry-farming system and the agricultural species cultivated, which can achieve optimal harvests without leaving the soil devoid of moisture. The amount of water in the soil in the agricultural year 2019-2020, although it was deficient, exceeded the value of the withering coefficient, thus allowing crops to grow. However, this was not enough to obtain rich harvests.

    Neuromarketing in the agri-food sector

    The concept of neuromarketing, one of the most current and modern, is increasingly present in practical marketing research, being used mainly in the study of consumer behavior. The concept only appeared in 1983, but in 2020 over 150 profile companies were active. Neuromarketing combines the science of the brain with the science of marketing, and manufacturers and/or retailers use neuromarketing techniques to boost sales, encourage consumption, and make a profit. The present work addresses the specifics of neuromarketing techniques in the agri-food field. It starts from the fact that these techniques differ from the classic ones, in that purchase and/or consumption decisions are not made only on rational grounds, the emotional ones predominating. The most well-known neuromarketing techniques are: electroencephalography (EEG), eye tracking, facial coding, galvanic skin response (GSR), implicit association test (TAI), etc. All these provide information on the processing of marketing stimuli and the making of purchase and consumption decisions under the influence of a complex set of emotions, feelings, perceptions or values impossible to measure with traditional quantitative methods. The aim of the paper is to create a dashboard with neuromarketing techniques applicable in the agri-food sector, based on the foray into the literature regarding the validity and functionality of these techniques for agri-food consumption. The assumption on which the approach of this paper is based is that neuromarketing techniques have an extremely significant impact on the purchase and consumption decision, and promotional actions based on such techniques, especially those that generate compulsive purchases, contribute to the increase in unbalanced consumption.

    Assessments of cryptocurrency accounting from an international perspective

    The international accounting bodies concerned with the subject recognize the asset attributes of cryptocurrencies, but have different views on their classification and dispute the valuation model for cryptocurrencies. Cryptocurrencies are not cash or cash equivalents and do not have the characteristics of monetary assets as they do not have the characteristics of a sovereign currency. Depending on the purpose of acquisition and holding, cryptocurrencies may be classified as inventories or intangible assets, but the valuation model for cryptocurrencies and the gain or loss from holding them again violates the current regulation of accounting standards for inventories and intangible assets. Fluctuating market prices of cryptocurrencies make the financial and holding conditions of these assets less predictable for individuals and businesses. As there are no accounting standards that specifically address crypto assets, existing IFRS should be considered and a principle-based approach applied. The article highlights some of the approaches of international financial accounting standards that are currently being debated and also shares views on how IFRS could be applied to cryptocurrency accounting.

    Operational research – strategic tool in environment–agribusiness interaction

    Although it is a science in its own right operational research is not so well known in the field of economics and agribusiness but it possesses methods and relationships that could help ensure the natural-agribusiness environmental balance. Operational research is not a strictly mathematical science; it uses mathematical techniques but has a much wider application spectrum representing a systematized approach to solving problems that uses analytical methods in the process of finding the appropriate solution. In the environment-agribusiness interaction, operational research can represent a tool that can contribute to more effective planning, generating scientifically based solutions to current problems and therefore gaining a competitive advantage in relation to similar enterprises. By means of the specific methodology (modeling, simulation, optimization through linear programming, etc.) it can determine the optimization of production flows, establish the most efficient way of determining feed in the livestock sector and realize the optimization of transport networks (e.g. the shortest path problem). The decision-making process under conditions of risk and uncertainty is one of the essential elements in the management of a company that can provide the necessary data for a viable strategic approach, providing optimal solutions to the problems encountered. The work aims to highlight the importance of operational research as a science, to provide an image of how to use specific techniques and methods, indicating the favorability of using it as a strategic tool both in agricultural business and for environmentally friendly policy.

    Examples of good practices for developing academic integrity

    The university represents a space of values and, on this basis, it becomes a creator of culture, innovation and civilization. That is why academic integrity has become a defining feature of university activity. Academic integrity considers the behavior of teaching staff, students and the entire academic community under the sign of: honesty, trust, fairness, respect and responsibility (TEQSA, 2022, https://www.teqsa.gov.au/what-academic-integrity, accessed on 20.09.2022). Donald McCabe (1944-2016) is considered the "father" of research in this field. Important contributions to this issue were made by: Tracey Bretag (Australia), Cath Ellis (Australia), Sarah Elaine Eaton (Canada), Thomas Lancaster (Great Britain), Tomáš Foltýnek (Czech Republic) and Tricia Bertram Gallant (USA). Our communication aims to present some examples of international good practices regarding the promotion of academic integrity (Stanford, Oxford, Yale, Berkeley, MIT, Great Britain, Australia), which can also be used in the Romanian university environment. The approach we propose is a systemic, integrative and proactive one, to initiate the main actors of the university environment in the methodology of scientific research.

    Evaluation of the implementation of eco-conditionality rules on support schemes and measures for farmers in the period 2018-2021

    The present work starts from a real truth, namely that agriculture is an important factor of social stability with an essential role in maintaining the ecological balance. The main purpose of the paper is to evaluate the implementation of the ecoconditionality rules on support schemes and measures for farmers in the period 2018-2021 and to optimize the crosscompliance system in the direct payments for farmers in Romania by finding the best model for the implementation of the cross-compliance (ecoconditionalitate) rules in the period 2021-2027 that corresponds to the specific objectives of the PAC and the economic interests of the farmers. The main objectives of the CAP are: increasing agricultural productivity, guaranteeing a fair standard of living for the rural population, stabilizing agricultural product markets and guaranteeing of food security for the population and farmers income. To accomplish this goal, the work aimed at the following study objectives: Assess the implementation of the rules on cross compliance schemes and measures to support farmers in 2018- 2020, by analyzing the results for monitoring compliance and cross compliance penalties; Development of a simplified model for implementation of cross compliance rules applicable to schemes and support measures for farmers in the period 2018-2020, based on a set of standards/requirements relevant and an effective administration and control for each area subject to cross compliance. To achieve this goal, the work aims to develop a simplified model for the implementation of the cross-compliance rules applicable to support schemes and measures for farmers in the period 2015-2020, based on a set of relevant standards / requirements and an efficient administration and control system for each domain subjected to cross-compliance.

    Study on cost analysis in farms in the N-E and S-E development regions of Romania

    An important problem of Romanian agriculture is the fragmentation of land which correlates significantly with the diversification of household production. The evolution of agricultural production systems worldwide is influenced by the globalization of international trade in the current stage of socio-economic development, which amplifies structural interdependence for economies in different regions. The aim of the paper is to analyses costs on farms in the North-East and South-East regions of Romania. Field research was conducted in the agricultural year 2020-2021 on a representative sample, by size categories, of 60 farms in the NE and SE development regions, 30 in each region and 5 in each county. The 5 farms were selected by economic size (below 100 thousand SO; 100 thousand SO - 250 thousand SO; 250 thousand SO - 500 thousand SO; 500 thousand SO - 750 thousand SO; above 750 thousand SO). The economic size of the farms was pre-determined in the survey in order to accurately determine the costs in agriculture. The results suggest significant variability in costs by structure, farm size and area of activity. The sum of the influence of these factors can also be associated with a diversified management system.

    From farm to consumer: enhancing the value of agri-food products from mountain country farms through local gastronomic points

    The European strategy "From Farm to Consumer", one of the key initiatives of the "Green Pact for Europe" is a new approach to the way consumers increasingly appreciate local food and direct sales. The Local Gastronomic Point (LGP) is a new approach that is developing in Romania, which meets these requirements, contributing to the creation and maintenance of jobs, to the sustainable development of rural communities and farms, being also the shortest sales chain, between producer and consumer. The Local Gastronomic Point is a concept that responds to the growing requirements in Romania, regarding the establishment of family catering units (farms), located in rural areas, that offer products and "cooking" specific to different geographical areas of Romania, following the rules and conditions of hygiene and food safety. Due to the LGP, farmers can enhance the value of their agri-food products, developing the complementary economic activity of serving local food/products, even "mountain products" and tourists/consumers can consume natural, traditional, specific and quality products from a particular region. This family-type activity is transferable to other mountain areas, to other rural localities, which may or may not have tourist potential. It can contribute to the development of rural tourism or to the creation of routes dedicated to gastronomic tourism.

    Research regarding the influence of the flour sort on the textural, physico-chemical and sensory parameters of sourdough bakery products

    The structural, physico-chemical properties and sensory characteristics of sourdough bakery products represent important quality indicators that may be modified adue to changes in the process and parameters for products obtaining. The main role of sourdough used in the process of bakery products obtaining, consists on the fermentation process achievement, through the metabolism of sugars by the enzymatic action of sourdough and the release of CO2, alcohols and other secondary products. Natural sourdough differs mainly from compressed yeast in that the fermentation process in natural sourdough involves a slow process, called lactic fermentation, described as an anaerobic process in which organic substances are transformed into lactic acid by the action of microorganisms, whereas compressed yeast enriched with yeasts of the Saccharomyces cerevisiae genus, involves a rapid process of alcoholic fermentation. The main purpose of the present research was to identify the influence of the flour sort on the quality of natural sourdough and on the textural, physico -chemical and sensory properties of the sourdough bakery products. Thus, two type of natural sourdough were obtained, respectively m1 – with superior flour (000 type) and m2 – with white flour (650 type) + wholemeal-flour (1350 type). The two types of sourdough were integrated into the recipes for the five experimental variants of bakery products, as follows: m1650; m1650,000; m1000, m1650,1350; m1000,1350; m2650; m2650,000; m2000, m2650,1350 and m2000,1350. The results of the research in terms of sensory evaluation are revealed that the variant m1650,000 was the most appreciated for most characteristics.
