The biological material subject to research belongs to the Karakul of Botoșani breed, has a known origin and is bred and improved for the production of skins. In order to be able to compare the results, three groups were differentiated by their age at the time of breeding, respectively a group that was 9 months old (L1) and two other groups were young females that were 15 and 20 months old (L2). and (L3). All three groups received the same experimental treatment, the only differentiating factor being age at the time of use in reproduction. Based on the data obtained towards the end of the breeding season, the main indicators specific to the breeding activity were determined. Regarding the fertility index, higher average values were obtained in the groups formed by females with 15 and 20 months of age, respectively 88.57% and 94.28%. In the case of the group of 9-month-old females, the value of this indicator was only 68.57%. On the other hand, when evaluating the prolificacy index, close values are found between the three groups, the differences being small and statistically insignificant. M.; Crismaru, A.; Pascal, ConstantinThe aim of the research was to carry out a complex study in order to evaluate the current state of improvement of the resistance and elasticity of the curls to the main color varieties formed within the Karakul of Botoșani breed. The biological material subjected to the assessments was represented by purebred lambs obtained from the elite nucleus of the Karakul of Botoșani breed growing at the Research and Development Station for Breading Sheep and Goats Popuți-Botosani. The lambs subjected to the evaluations belonged to all color varieties of the respective breed, obtained over three successive generations, coming from lambing seasons that took place in 2013, 2014 and 2015, respectively. The method applied in assessing the objectives was based on the technical norms specified in Section 1.4 and 1.5 of the MADR Order no. 22 / 20.01.2006, published in the Official Gazette of Romania no. 146 of 15.02.2006 and in which are specified the aspects based on which the official Control of the skins production is performed. Following the research, it was found that the breeding process is located on different levels in the color varieties found in the Botosani Karakul breed. The evaluation of the degree of expression for the strength and elasticity of the curl in black lambs shows that the breeding process is more advanced because the average score was very close to the maximum accepted (45.19 ± 0.451) for these characters. The aim of this study was to see if we can improve milk production of local sheep from the Nord-East of country by crossing with Awassi rams. For this we cross local sheep with Awassi rams. First generation lambs have a good body development with an average body weight of 5.5 kg at birth and 17.5 kg at age of 60 days. First generation ewes have a bigger milk production than his mothers with a better udder development. The lactation length of first generation ewe was bigger with 15% than local sheep. Under these conditions, some new populations appeared, with distinct characters associated with some of the specific productions of sheep. During this period, Palas milk breed, Palas meat breed, Black head sheep from Teleorman, Brown variety of Karakul of Botoșani breed and the Grey line from the same breed were approved as breeds. Regarding the new sheep population formed at the Research and Development Station for Sheep and Goat Breeding, Secuieni-Bacău, the works were started in 1982 when were introduced for breeding at Luncani farm rams of Awassi breed which were used for natural and artificial breeding on a number of 114 local Rusty Țigaie sheep. In 1983, according to the Technical Report prepared by Eng. V. Caprosu et al. cited by Pascal (2018) crosses were made with 1500 Țigaie sheep from two units in Bacău County, namely SCPCO BACAU, currently SCDCOC Secuieni-Bacău, (500 sheep) and CAP Mărgineni (1000 adult sheep) and rams of Awassi breed brought from SCPCO Rușețu. During the crossing process the males obtained in F1 and R1 were sacrificed and the females with desired traits were selected in order to continue the formation process. From the R2 generation, along with the females, the males with valuable qualities (growth intensity, vigour, vivacity) with correct exterior and a robust constitution were also selected. From that moment on, the individuals R2 and R3 reproduced themselves for 4 generations (back cross), applying a rigorous selection and a directed crossing in which, in order to increase the degree of phenotypic similarity, a moderate inbreeding was used. Currently, the nucleus has been closed reproductive for over seven generations, and against this background the degree of similarity between them has increased, the production and reproduction characteristics have been very well consolidated, as well as those that confer a resistance to pedoclimatic factors specific to the training area. The new population is distinguished from other breeds with which it cohabits in the formation area, having a distinct phenodeme and genodema. Also, highlighting the differences between it and the local sheep, which dominate in the breed structure located in the training area.listelement.badge.dso-type Item , listelement.badge.access-status Open Access , Assessment of quality of some white chocolate assortments sold in Romania(“Ion Ionescu de la Brad” University of Agricultural Sciences and Veterinary Medicine, Iaşi, 2020) Pop, Mircea-Ioan; Albu, Aida; Frunză, GabrielaThe study consisted in the comparative assessment of the quality of some varieties of white chocolate sold in Romania, following their sensory, chemical (including energy value), economic and aesthetic characteristics. They were analyzed 27 samples from three varieties of white chocolate (coded A, B and C, nine samples for each producer). The sensory characteristics were analyzed by tasting, using the method of scoring scales, and the content of water, dry matter and lipids was determined by standardized classical methods; the results obtained were compared with the values declared on the label. In economic terms, the purchase price per 100 g of product was compared. Following the sensory analysis, two products were included in the category of good products (with 17.72 and 17.90 points respectively) and one in the class of very good quality (with 18.61 points). According to the information on the labels, the products studied had a variable sugar content (55-65%), fats (28-39%), protein (4.3-5.5%) and salt (0.18-0.38%); in the case of fats, the values determined by analyzes were slightly different, respectively of 28.46-38.06%. The average price (per 100 g) of the studied products varied almost to double (+ 91.2%) in the case of chocolate with the lowest sugar content and the highest fat content, but also with the highest sensory score, the lowest price being of the product richest in sugar.listelement.badge.dso-type Item , listelement.badge.access-status Open Access , Change management in tourism in the context of the Covid 19 pandemic(“Ion Ionescu de la Brad” University of Agricultural Sciences and Veterinary Medicine, Iaşi, 2020) Panaitescu, Manuela; Renea, PetronelaTourism is an important sector with an impact on the development of a country’s economy. The main benefits of tourism are generation of income and creation of jobs. For many countries it is the most important source of well-being. The dizzyingly rapid spread of COVID-19 infections has caused Romania to face a crisis situation for the management of which it is striving to find solutions. The impact of the crisis is strongly felt both in terms of the capacity of economic agents to manage human resources, but also in terms of trade relations with business partners. The situation we are in, but especially the one we want to reach, requires urgent and radical measures. The main objectives of the managers must be: removing tourism from its critical state and resetting the entire hospitality industry, positioning itself on other coordinates, taking into account global trends in the field and considering the successful international models and local specificities. One of the unexpected effects of this pandemic is that organizations have acknowledged the benefits of digital transformation. The shad meat is appreciated for its fine taste, but also for its fat, which is made up of polyunsaturated fatty acids. The aim of this study is to bring new data on biological parameters, maintenance status and biochemical composition of Pontic shad (A. immaculata), during the period of maximum migration (April), on the Danube section the river mouth, where it flows into the Black Sea, and the point km 197, in Braila county. The samples were taken from 3 different points: St. Gheorghe arm (station 1), Isaccea village, Tulcea county at km 103 of the Danube (station 2) and Chiscani village, Braila county at km 197 of the Danube’s mouth (station 3). The age of fish ranged from 3 to 5 years. The most abundant specimens are groups aged 3 years (40%) and 4 years (36%). The gender structure of catches is represented by 53% females and 47% males. The Fulton condition factor had values between 1.13 and 1.28, with the highest value at the beginning of the migration, in the area of the St. Gheorghe arm (1.28) and the lowest value (1.13) at 197 km from the Danube’s mouth, in the intermediate area, at km 103 the value being 1.15. The percentages of lipids in the meat of the Pontic shad taken from stations 2 and 3 were relatively equal, of 17.62%, respectively 17.65%, the highest value being registered in station 1, at St. Gheorghe, where the value was 18.60%. The percentage of proteins for the biological material from Station 1 – St. Gheorghe was 0.4% lower than that of the samples taken from Station 2 - Isaccea, km 130 and 0.85% lower than that from Station 3 - Chiscani, km 197, the differences being insignificant (P> 0.05).listelement.badge.dso-type Item , listelement.badge.access-status Open Access , Common carp adaptability (Cipryinus carpio) to rearing in floating fish cages installed in irrigation canal(“Ion Ionescu de la Brad” University of Agricultural Sciences and Veterinary Medicine, Iaşi, 2020) Nistor, Veta; Mirea, D.; Athanasopoulos, Liliana-Blondina; Tenciu, Magdalena; Brânză, DorinaWith the increases of world fish consumption and stagnation of wild fish catches, the contribution of aquaculture to world fish production has steadily increased from 25.7% in 2000 to 46.8% in 2016. Integration of aquaculture in irrigation canals, respectively dual use of the same water, first for fish production and later for irrigation is a relatively new technological concept, used to maximize the efficiency of water use, by designing and locating removable installations and establishing technologies for rearing fish in small bodies of water ( irrigation canals). The CM LUNCA irrigation canal on which the experiment took place was artificially built in 1969 and serves a very large agricultural area; is part of the irrigation network of Covurlui Plain and is managed by A.N.I.F., Southern Moldova branch. The irrigation system of which C.M.L. is part of, consists of the main pumping station SPA Dunărea, 6 pumping stations SPR, 21 pressure stations SPP, 37 canal motor pumps, 126 km irrigation canals. The Lunca Magistral Canal has a length of 19240 m and stretches from km 78.4 of the Danube from where it makes its outlet, passes behind Lake Brateș and reaches close to Vânători commune. The Danube pumping station is the main station of the Covurlui Plain (S.P.A.) subsystem and takes the water from the Danube river through the gravitational outlet with a flow of 54 mc/s. The distribution of water on the canals is ensured by the main dam, which has three openings with cofferdam and flat dams. The water from the C.M.L. currently irrigates only 5566 ha, located on the first terrace (surface that requires about 3m/s), and the surplus is intended for the upper terraces, which require a pumping height Hp = 90m. The biological material was collected from the autumn fishing between August and November 2019. During the four months, following the scientific fishing, 1.250 fish specimens belonging to 7 species were collected. The dominant family, Cyprinidae with a percentage of 74%, is represented by four species, namely Cyprinus caprio (carp), Carassius gibelio (crucian), Abramis brama (bream), Ctenopharyngodon idella (grass carp), followed by the family Percidae with a percentage of 23% represented by two species Sander lucioperca (pikeperch) and Exos lucius (pike), and the family Siluridae with a percentage of 3% represented by Silurus glanis (catfish). Experiments were carried out between 15 -24 May 2020 at the artificial fish breeding station at F.C.R.D.S. Nucet. Several concentrations of formalin (1 ml / l, 1.67 ml/l and 2 ml/l) and table salt (NaCl) (1 g / l, 3g /l, 5 g/l) were used to determine the duration and frequency of treatment for carp embryonated eggs. The effectiveness of formalin solutions was evaluated compared to that of table salt solutions by comparing the rate of hatching and larval survival. The analysis was performed by portioning the biological material in the main anatomical sections, followed by determining the biochemical parameters (moisture, ash, proteins and lipids), through standard methods of analysis corresponding to each parameter. Rainbow trout reared in a recirculating system has the meat percentage by 8.43%, the protein percentage by 19.93% and the fat percentage by 26.29% higher, compared to the rainbow trout reared in earth ponds. Consumers demand a healthier and safer food and nutritionists recommend a diet low in saturated fat and rich in polyunsaturated fatty acids. The aim of this research is to investigate how diets supplemented with fatty acids affect the disease resistance of the carp species (Cyprinus carpio) 1 year of age, reared in a recirculating system. The experiment was performed in the recirculating pilot system, over a period of 2 months, using 120 specimens of carp (Cyprinus carpio) and three experimental feeding diets, supplemented with oils from various sources, rich in unsaturated fatty acids. In the experimental groups there were no mortality due to the use of oils rich in fatty acids that have the property to increase the immune system of the fish, compared to the control group where the survival was 86.66%. In the three experimental groups, at the end, a slightly higher level of proteins is observed in group T3 (18.18 g%), compared to group T2 (17.7 g%) and T1 (17.75 g%), the difference being proportional to the weight gain, but the difference is insignificant (p>0.05) which suggests the almost similar evolution of biological material in protein retention, regardless of the source of fatty acids. The feed conversion ratio and protein efficiency improved with the addition of lipids in the feeding diets. The addition of oils to feeding diets resulted in an increase in blood parameters measured in the experimental groups (PCV, Hb, Erythrocyte, MCV, MCH and MCHC), compared to parameters monitored at the beginning of the experiment and at the end of the experiment in the control group fed without oil supplements.listelement.badge.dso-type Item , listelement.badge.access-status Open Access , The evolution of dairy products that benefited from the mention of optional quality "mountain product" in the mountain area of Romania, during the period 2017-2020(“Ion Ionescu de la Brad” University of Agricultural Sciences and Veterinary Medicine, Iaşi, 2020) Ciocan Alupii, Maria; Maciuc, VasileThe paper aimed to present the situation of dairy products that benefited from the optional quality mention "mountain product" in the mountain area of Romania, during the period 2017-2020. This paper is based on statistical data provided by the National Sanitary-Veterinary Authority and for Food Safety and also by the National Institute of Statistics and the National Agency for Mountain Area, data from the National Register of Mountain Products. These were processed within the National Agency of the Mountain Area in the following indicators: number of counties with mountain area, number of Administrative-Territorial Units in the mountain area, total area of the mountain area (Km2), area of pastures and hayfields in the mountain area (ha), the herds of animals from the mountain area (cattle, sheep, goats, pigs), number of dairy products that benefited from the optional quality mention “mountain product”. Hence it was found that total water content, dry matter and energy content was influenced by the temperature variations in scalding, chilling and storage, we tried to investigate whether the textural and technological parameters are also affected by such variation, both in refrigerated and frozen meat. Three groups of carcasses were studied for the refrigeration flow (one control - RC, two experimental - R1 and R2), varying the experimental factor, temperature, during scalding (RC=51-53°C, R1=53 54°C, R2=55-56°C), during chilling (RC=1-4°C, R1=2-3°C; R2=1-2°C), during sorting-packaging (RC below 2⁰C; R1=8-10°C; R2=6-8°C), throughout storage prior to delivery to market (RC=0-2°C; R1 and R2=0-1°C). Also, for the frozen meat, three groups were set (FC, F1, F2), providing them the same graduations of the experimental factor like in the refrigerated groups, in the pre-freezing stages (scalding, chilling, sorting), while in the fast freezing moment, the temperature varied accordingly (control FC=-30…-35 °C, F1=-32…-33 °C, F2=-33…-34 °C). The biological material comprised 90 ROSS-308 broiler carcasses in refrigeration flow (30 per group) and 90 ROSS-308 broiler carcasses in freezing flow. Pectoral muscles were used from each carcass in pieces weighing 250 grams and were shaped in rectangular chops of 5 cm length x 1 cm width x 1 cm depth along the muscle fibers, to be submitted for shear force (SF) reading (N/cm2) using a Warner-Bratzler (WB) chamber. Also, the same muscles were used to sample 100 g pieces to be submitted to drip loss (DL) via tube centrifugation and cooking loss (CL) analysis via boiling in sealed plastic bags. The analytical tests were carried on in duplicate per each sample. SF proved to increase as the temperature in scalding and sorting packaging was higher, due probably to more intense water loss and concentration of dry matter, which led to firmer meat: 22.48 N/cm2 in CR, 22.96 N/cm2 in R1 (P<0.05) and 23.11 N/cm2 in R2 (P<0.01). The preservation through freezing acted as a tenderizer, probably due to connective tissue and to myocytes membranes disruptions: 22.48 N/cm2 in CF, 22.96 N/cm2 in F1 (P<0.01) and 23.11 N/cm2 in F2 (P<0.001). However, it should be investigated to what extent the destruction of the connective stroma due to ice crystals really acts toward tenderizing, because losing the structure eventually lead to poor texture and lower juiciness. The technological parameters of the breast meat varied accordingly, following the shear force progression, thus the samples with higher WB values had lower DL and CL, with variations within the -2.5…-7.9% range (P<0.001), comparing to the ones which were more tender, in appearance. Follow up: sensorial analysis using trained panel of tasters, in comparison with the instrumental analysis of the textural profile.listelement.badge.dso-type Item , listelement.badge.access-status Open Access , Research on the characterization of beef proteins(“Ion Ionescu de la Brad” University of Agricultural Sciences and Veterinary Medicine, Iaşi, 2020) Mădescu, Bianca-Maria; Lazăr, Roxana; Ciobanu, Marius-Mihai; Boişteanu, Paul-CorneliuThe objective of this research was to characterize a group of six proteins (myosin, actin, myoglobin, globulin, collagen and elastin) that are found in beef, presenting their physical and chemical parameters, but also the proportion of amino acids of each protein. Also, the molecular functions, biological processes and location of each protein studied were presented. For all six muscle proteins were calculated parameters using the ProtParam program. Myosin is high in leucine (9.5%) and glutamic acid (9.4%), actin in alanine (7.7%) and glycine (7.5 %%), myoglobin in alanine (11.7%), lysine (11.7 %%) and leucine (11.0%), globulin in leucine (10.5%) and serine (8.9%), collagen in glycine (26.6%) and proline (19.1%) and elastin is largely represented by glycine (30.8%) and alanine (20.7%). The females were grazed daily, benefiting from natural pasture, specific to the Dobrogea area. Before each milking, 100 g of special granules for goat's milk were administered. After weaning (April), the goats were milked twice a day for 5 months. Milk production control was carried out monthly, after the weaning of the kids, for three consecutive months, starting with May. For this, the amount of milk milked in the morning and in the evening was weighed individually. The computation of the total individual production was calculated by applying the Fleischmann formula in the case of milking the goat after a period of lactation, when the first milking is done after the flat-rate date of the end of lactation. For primiparous, the total individual milk production was between 124.35 kg and 199.76 kg with an average of 164.93 kg/head/day. At multiparous, the average total individual milk production was 168.32Kg. Biochemical parameters (fat, protein, lactose) were analyzed by ultrasonic method in a standardized analyzer for goat's milk. At primiparous, the fat concentration reaches a maximum of 3.12 g% in July, and at multiparous 3.36g% in June. The protein concentration had values between 2.87g and 3.08g% at primiparous and between 2.90g% and 3.22g% at multiparous. The results of our analyzes recorded a maximum of 4.36% for lactose in June for primiparous and 4.58g% for multiparous. There were different yeast and fungi has been used on fermentation coffee pulp such as Aspergillus niger, Trichoderma viride, Rhizopusoryzae, Pleoratusostreatus, and Saccaromyces cerevisiae. It is known from several existing data that the treatment of the fermentation will influence the quality of fermentation. Different doses, single or multi culture of fungi and duration of fermentations affected the quality of coffee pulp fermentation. Type of coffee such as Arabica and Robusta coffee also affected fiber fraction of fermentation coffee pulp. The results showed that there were variations on fiber fraction such as lignin, cellulose, hemicellulose and tannin with different treatment of yeast or fungi fermentation. However, the variance of those fiber fraction seems similar after fermentation processes. Lignin and tannin were decreased by the fermentation. Meanwhile, hemicellulose and cellulose were increased after fermentation. Other benefits of fungi or yeast fermentation of coffee pulp increased protein content and reduced caffeine levels. Moreover, the supplementation of fermentation of coffee pulp did not give any negative effect on rumen pH, volatile fatty acid, NH3, and digestibility. The birds were reared according to the species-specific technology, and the actual determinations were performed on 20 individuals (10 males and 10 females) who were slaughtered at the age of 42 days. During the research, one of the indicators followed was the live weight, by weighing the flock of birds, using an electronic scale. After slaughter, the poultry carcasses were weighed fresht, but also after refrigeration (24h at 4°C). With the data provided, the slaughter yield and the share of participation in the carcass composition of the cut portions were calculated. The data were statistically processed using the Anova (Analysis of variance) program. After weighing the studied males, an average weight of 2622.98 g was found, and in females, the average recorded weight was 2480.04 g. and 76.67% on refrigerated carcasses). In the case of females, slightly lower values were obtained, of 74.28% for the cold yield and 75.68% for the hot yield; recorded the best performance in the thighs (21%) and in the chest (24%). After the first week of life, the chicks in the control batch (LM) achieved an average daily gain of 21.73 g / head / day. The birds in this series had a total increase (42 days), an increase of 54.91 g / head / day. For the second batch (LA), the results were slightly better. Thus, the weight gain started from a value of 23.87 g / head / day (after the first 7 days), the average for this parameter being 63.60 g / head / day. At the end of the experiment, the average of the first batch was higher compared to that obtained in the second batch (LM> LA) 1.66 kg c.f./kg increase> 1.22 kg c.f./kg increase.
